I bet you didn’t read those numbers.

I’ll let you in on a secret – I didn’t either.

The ingredients above were copied and pasted from the first Google search result for “fried rice recipe.” But, without any disrespect to the recipe’s owner, I can tell you it’s wrong.

The only true fried rice recipe is no recipe at all. There are no measurements, no exact instructions, no timer for how long something should sizzle in the pan. There are only smells and feelings and memories. I learned to cook fried rice on the rickety stool covered in Blues Clues stickers, surrounded by the scents of my nainai’s Minnie Mouse apron, my yéyé’s cashmere sweater, or my mama’s Pantene shampoo; in the comfort of our cozy condo and our sweltering Hángzhou apartment; by watching the eggs crack over delicate china bowls, tossed and stirred in woks using slanted wooden spatulas. We used however much leftover rice we had, however many eggs we found appropriate, and a combination of anything and everything or nothing sitting in the fridge.

I’ve always been more of a baker than a cook. I enjoy recipes – I enjoy the process of being exact and finding details, tweaking and leveling and weighing. Other people will have recipes passed down from their great-grandparents; I will have memories, held dear, but no way to pass anything on besides the recreation of childhood moments. From a young age, I found solace in the meticulous baking recipes found in Western cookbooks.

This coveting of all things exact doesn’t flow into the rest of my life. My mom will tell you my desk is a mess – I call it “room for creative license.” My mom will tell you my closet is also a mess – I call it “fashionably curious.” My mom will tell you my life is sometimes, you guessed it!, a mess. I call it MAPWIFOWISTBSIDMOTBOML, also known as “my-artistic-phase-where-I’m-figuring-out-who-I’m-supposed-to-be-so-I-dumped-myself-out-to-be-organized-much-later.” That’s a mouthful, so I shorten it, obviously.

On the flip side, I like measuring the liquid in my graduated cylinder from the exact bottom of the meniscus. If your text message has a typo in it, I feel the nagging urge to annoyingly correct you. If the origami swan I folded has an uneven tail, I will take it apart and start over. (This was certainly detrimental to my life during my middle school’s mission to fold 3,000 paper swans.)

But I understand the beauty of spontaneity and organic creation. There’s something special in realizing that no two recreations of my grandpa’s fried rice will ever be the same, and really, isn’t that what life is? Creation, without recipe?

It’s funny. This may contradict everything I’ve written thus far, but the more I bake, the more I realize perhaps baking is spontaneous too. I don’t always need to weigh my flour beforehand in order to get perfect cookies, nor do I really need to add the copious amounts of sugar the recipe calls for. My signature food is brownies, but I challenged myself to use a different recipe every time. You’d be surprised at how different brownies taste when you add an extra egg, and you’d be especially uncertain about my baking skills if you tried my brownies that had wayyy too much baking soda (trial and error…).

I’m learning to love improvisation. It’s not mutually exclusive with loving precision, and it’s such an integral part of my culture, I’d be missing out otherwise. Coming to terms with and embracing the unknown is scary and definitely a process, but I assure you: One day, I’ll master my own fried rice.

  • Rinse the chicken pieces under cold water and pat them dry with paper towels.
  • Season the chicken with salt, pepper, and half of the minced garlic.

BEST Fried Rice Recipe

Fried Rice has to be one of my all time favorite takeout inspired dishes to make at home. It’s easier to control the saltiness, sweetness and to bump up the veggies when you make it at home! Our family makes this fried rice recipe at least once a week with whatever vegetables we have on hand. It is always the perfect accompaniment to my take out style dishes. I love serving this rice with my General Tso’s Chicken and my Slow Cooker Broccoli Beef .

It all starts off with cold day old rice . This is super important! If you are like me and don’t always plan ahead make sure to cook your rice first and allow it time to completely cool in the fridge or freezer. Fried rice is best when it is made with cold rice. You can even cook the rice the night before. The longer the rice sits the better it tastes!

Next, I add in lots of veggies! For flavor I add soy sauce and oyster sauce . I also like to add Sriracha for a little kick. This recipe is a great way to work in any leftovers. You can substitute any vegetables you have on hand. You can also toss in chicken, bacon, pancetta or try my Shrimp Fried Rice or Beef Fried Rice Recipe .

The Best Rice for Fried Rice

Long grain rice has less starch which makes it the perfect choice for fried rice. Using a long grain rice like jasmine rice will result is soft and fluffy rice every time! Other rice varieties like short grain sushi rice would not work for fried rice. It would make the fried rice clumpy and almost gummy in texture. Not what were looking for!

Fried Rice Ingredients

  • Butter: This is my secret ingredient ! This is what they use at hibachi restaurants for their fried rice and has been a game changer ever since I started using it. It adds a lot more flavor and helps to brown the rice. You can always substitute any other cooking oil if you prefer but I really suggest giving butter a try in your fried rice.
  • Eggs: Are added for protein and are typical in fried rice recipes. You can omit and substitute tofu if you are allergic to eggs or simply not a fan.
  • Veggies: I use diced carrots, onions, garlic and peas. Feel free to use whatever vegetables you have on hand. Bell peppers, zucchini, leeks, corn and edamame would all be great in this!
  • Rice: I prefer to use long grain white rice or jasmine rice. It cooks up fluffy and does not clump together.
  • Soy sauce: I always use low sodium soy sauce however dark or regular soy sauce can be substituted just make sure to dilute it a bit with water to cut down on the saltiness.
  • Oyster sauce : Is a thick savory slightly sweet and salty sauce that can be found in the international or asian section of your grocery store.
  • Sesame oil : Adds a wonderfully nutty flavor to this recipe. A little bit goes a long way!
  • For serving: I like to top my stir fried rice with green onions and sesame seeds for garnish.

How to make Fried Rice

  • Start by heating 1 tablespoon of butter into a large skillet. Add the eggs and scramble until fully cooked.

  • Remove them from the pan and set aside. Add the remaining tablespoon of butter into the pan. Add carrots and onion to the pan and cook until tender, 3-4 minutes. Stir in garlic and cook for an additional minute.

  • Add in the cold rice and peas and sauté for 3-4 minutes. The rice should brown up a bit.

  • Add the eggs back to the pan and stir in soy sauce, oyster sauce and sesame oil . Cook for 1-2 minutes to heat through. Serve immediately with green onions for garnish, if desired.

Can you make Fried Rice in the Air Fryer?

Yes ! Cooking fried rice in the air fryer is super easy! Simply add all of the ingredients to the air fryer and cook until warmed through. Find the full step by step instructions in my Air Fryer Fried Rice Recipe

Tips for making The Best Fried Rice

  • Choose the right type of rice:  Long grain rice like jasmine is best!
  • Use COLD day old rice:  For best results! Cold rice will crisp up in the hot oil. Warm rice will not toast and can even become mushy. If you are in a pinch make the rice first and spread it out onto a baking sheet in a single layer. Pop it in the fridge or freeze to cool down quickly then use as directed.
  • Always rinse the rice before using: This removes the extra starch from the rice and prevents it from clumping.

  • Add some heat: If you like extra heat add in some Sriracha or chili garlic sauce. I usually start at about 1 teaspoon and work my way up.
  • Break up the clumps of rice: When rice is old it tends to clump up. To ensure even browning and crisping of the rice break up the clumps with your hands before stir frying.

Why Butter?

Have you watched them cook fried rice at a hibachi restaurant? They always use butter and it is so good! After I saw them make it with butter I always make my fried rice at home with butter instead of oil. I love the flavor and richness that the butter adds to the dish. It also helps the rice and veggies brown up perfectly!

Why cold rice?

When rice is just cooked and still warm it clumps together. However when you use cold day old rice the rice dries out a bit and the clumps can be easily broken apart. This ensures each kernel of rice actually gets “fried” when your stir frying resulting in a less mussy fried rice!

  • In place of the rice try adding cauliflower , quinoa or riced broccoli for a healthy low carb twist.
  • For protein add beef , shrimp or chicken to this recipe. Simply brown the protein first, set aside then toss back in with the rice and veggies once they’ve finished cooking.
  • For a twist try adding chopped up kimchi for kimchi fried rice. It adds the perfect tang and heat!
  • Brown rice can be substituted for the white rice for extra fiber and nutrients.
  • Feel free to substitute whatever vegetables you have on hand. Red bell peppers, celery or broccoli would all be great in this!

What can I use instead of oyster sauce?

If you can’t find oyster sauce or simply don’t have it in your pantry you can substitute hoisin sauce or try and make your own oyster sauce. Here is a great recipe for diy oyster sauce!

STORAGE AND REHEATING INSTRUCTIONS

  • Refrigerate: Fried rice for up to 4 days in an airtight container.
  • To freeze: Store leftovers in a large ziplock bag for up to 3 months. To freeze fill up the ziplock bag then lay flat and remove the air. This makes it easy to stack in the freezer and defrosts super fast!
  • Reheat from refrigerated: Reheat leftovers in the microwave, skillet or air fryer . You may need to add a splash more of soy sauce or butter to keep it from sticking to the pan.
  • Reheat from frozen: Allow the rice to defrost overnight in the refrigerator. Reheat rice in the microwave, skillet or air fryer.

Nothings wrong. I am from Malaysia and there are one called butter fried rice. And i always put bit of butter to finish the rice. It becomes more fragrant and buttery.. yums!

What brand would you recommend for the different sauces your recipes call for? ie, oyster sauce, sesame oil, fish sauce & mirin. I have tried sesame oil 1 time & was not pleased with the flavor, however I bought it at the local Walmart from the Asain food area. I live in the middle of Nebraska, not much too choose from. Store fresh ginger in the freezer, then just use a cheese grater when you need to add it to a dish, then pop the ginger right back in the freezer.

Rinse and cut the peppers, tomatoes, and 1 onion in quarters.

  • For a smokier taste, roast the red peppers before you blend them. Halve the red peppers and place them on a foil-lined baking sheet. Then, roast them in the oven at 400° F (200° C) for 20 to 25 minutes.
  • If you prefer more heat, add another scotch bonnet pepper to the blender.

Rinse the rice in water until it runs clear.

  • One of the differences between Nigerian jollof rice and other varieties is that it is traditionally made with long-grain rice, like Golden Sella basmati rice or white rice, that is parboiled. This is rice that is partially pre-cooked; it’s sometimes referred to as easy cook rice.
  • Feel free to use raw Golden Sella basmati or long-grain white rice instead of parboiled rice.

Heat the vegetable oil over medium heat.

  • Use a pot that you don’t mind burning a bit on the bottom. Slightly burning the rice and ingredients is what gives Nigerian jollof rice its tasty, smoky flavor.
  • As an alternative, use sunflower oil or palm oil in place of vegetable oil.

Chop 1 onion and saute it in the oil for 4 minutes.

Cook the tomato paste for 5 minutes..

  • It’s okay if some of the tomato paste sticks to the bottom of your pot. This just adds to the authentic, smoky flavor of Nigerian jollof rice.

Add in the pepper puree and spices.

  • Use beef or vegetable bouillon cubes instead of chicken if you prefer.

Add the rice, chicken stock, water, and salt.

  • Feel free to use beef or vegetable stock in place of chicken stock if you prefer.

Cover and cook the rice for 20 min.

  • If you don’t have a well-fitting lid, cover the pot with tin foil. Trapping the steam and cooking the rice over low ensures it has a soft, tender texture.
  • Some of the rice burning is okay, as you want to infuse Nigerian jollof with a smoky flavor.

Simmer the rice for an additional 10-20 min.

  • For extra flavor, add 2 tablespoons (28 g) of butter (or margarine) and slices of ½ an onion and 1 tomato into the pot when the rice starts to get tender.
  • If you’re using raw rice that isn’t parboiled, it might take an extra 20 minutes until the rice is soft and done.

Fluff and serve the jollof rice.

Store the rice in the fridge for 5 days..

Place leftover rice in an airtight container and keep it in the fridge.

  • Or, freeze your leftover jollof and heat it up on a day you don’t want to cook. Just place it in a freezer bag or airtight container and keep it in the freezer for up to 3 months. Then, reheat it in the microwave for about 4 minutes.

If your fried rice doesn’t turn out well, it’s probably because you have been making the following mistakes:

1. You are using the wrong rice

What sort of rice are you using? For fried rice, medium-grain rice works best since long-grain rice tends to dry up too fast and short-grain rice is too moist and clumpy.

For making fried rice, choose the Thai Jasmine medium-grain white type. The rice should be rinsed many times to prevent it being sticky.

Long-grain rice is used to make Nigerian fried rice, which is then spiced with ingredients like curry powder, turmeric, chilli powder, coconut milk, and proteins like liver and prawns.

2. Using the wrong pot

Due to its thin metal design, superior heat distribution, and steep edges, a wok is the perfect cooking vessel for fried rice. A wok makes your fried rice simple to stir and flip food without worrying about it falling onto the burner or countertop.

3. Not stirring ingredients properly

Everything depends on how you put the rice in the pan. Not stirring the ingredients in the pan is the key to achieving great fried rice. Instead of stirring, toss the ingredients into the pan. The rice will cook properly due to the constant tossing, but not to the point of burning.

4. Using the wrong oil

Chemistry plays a role in choosing the proper oil for stir-frying since it influences the temperature at which the oil breaks down and smokes. Smokey rice usually tastes better.

When it comes to selecting the best oil, what are your options? Butter is not ideal for hot pans since it has the lowest smoke point, it melts too quickly. Extra virgin olive oil is inappropriate for frying rice.

Canola oil, peanut oil, and unrefined avocado oil all have high smoke points and are the best oils for fried rice. After removing the sesame seeds, you can also sesame oil for a subtle sesame taste.

5. Adding the vegetable at the wrong time

Avoid adding raw or fresh vegetables or protein to fried rice at the wrong time since they might cook too quickly or slowly. It might cook too slowly and become soggy or too fast and become hard. The best thing is to cook them separately before adding them to your bowl of fried rice.

6. Use leftover fried rice

For fried rice, use leftover rice since it helps the grains stand and not cling to each other. It also retains nutrients.

7. Not using cornstarch

Here are a few important things I have learned over the years about how to make the best fried rice:

  • Use cold, cooked rice: The key to making perfect Chinese fried rice is using leftover, refrigerated rice. This is because chilled (preferably day-old) rice will separate nicely and won’t clump together in the pan. A freshly-cooked batch of warm rice will not fry well when it hits the hot pan, and will result in mushy clumps.
  • Use long-grain, white rice: It cooks up fluffy and not sticky, with individual grains remaining distinct and firm. I find that Jasmine or Basmati rice gives the best consistency, fragrance, and flavor.
  • Use butter: Japanese steakhouses use a big pat of butter when they’re making fried rice for good reason. Using butter (rather than oil) makes the rice brown up perfectly and just makes everything taste so much better.
  • Use a wok or large skillet: You want to use a pan that seems large for the amount of rice and other ingredients you are using. This allows the ingredients in the pan to heat up quickly and evenly. It also gives you plenty of room to toss everything together without anything falling out of the pan.

Chinese Fried Rice Ingredients

Okay, let’s talk ingredients. To make this homemade fried rice recipe, you will need:

  • Cooked, chilled rice: Make sure your rice has been cooked in advance and thoroughly chilled in the fridge in a sealed container. As I said before, freshly-cooked rice will not work well in this recipe.
  • Onions, carrots, peas, and green onions: This is the base mix of vegetables that I always use for fried rice, but feel free to substitute any other stir-fry vegetables you have on hand.
  • Garlic and ginger: These two ingredients add a zesty kick and depth of flavor. Always use freshly minced garlic and grated ginger for the best flavor.
  • Eggs: These add a good dose of protein, as well as flavor and texture. If possible, you should use organic, pasture-raised eggs for maximum health benefits.
  • Soy sauce: This savory condiment forms the base of the rice’s flavor. You could also use tamari, which is essentially gluten-free soy sauce. I recommend always purchasing high-quality organic tamari and soy sauce. Soybeans are one of the top GMO and pesticide-laden crops, so it’s worth spending the extra money on organic.
  • Sriracha: This spicy sauce adds a good amount of heat without overpowering the rest of the flavors in the dish.
  • Butter: Again, butter just makes everything better. I recommend using grass-fed butter if you can.

  • Kimchi Fried Rice: Kimchi adds an incredible flavor boost to fried rice. Just chop and mix it in your fried rice.
  • Chicken Fried Rice: Cook a couple of chicken breasts in a pan. Then shred or dice and add it to your fried rice. For a shortcut, use leftover or rotisserie chicken.
  • Shrimp Fried Rice: Pan-fry a pound of peeled, raw shrimp and then stir it into your fried rice.

  • 2 tablespoons butter, divided
  • 1 yellow onion, diced
  • 2 medium carrots, diced

Hi Melanie! I recommend cooking the chicken tenders before you make the fried rice. First cut up the chicken into small cubes and add a little bit of oil to the pan. When the oil is hot, add the chicken to the pan and cook for a few minutes until it is cooked through. Then transfer the chicken to a plate and set it aside. Then you can make the recipe as it is written and add the chicken back to the fried rice at the very end. I hope that helps!

This is an easy, classic chicken fried rice recipe you can make for a quick dinner on any weeknight. It’s also heavier on the chicken than you might be used to when getting takeout.

Limited by the low prices they need to charge to get by, Chinese takeout restaurants keep the chicken pieces small and the vegetables at a minimum. Because chicken isn’t the most flavorful protein on offer, I generally choose beef, pork, or shrimp when I order fried rice. However, this recipe has juicy chunks of chicken and crunchy vegetables.

Our already popular Classic Pork Fried Rice is hard to beat if you use fresh Chinese roast pork (char siu), but for those of you who don’t eat pork—or just happen to have a chicken breast in the freezer—chicken fried rice is delicious and easy!

Note: This recipe was originally published in October 2015. We have updated it with clearer instructions, higher quality photos, and metric measurements. The recipe is still the same . Enjoy!

Customize Your Chicken Fried Rice!

Remember, this recipe is only a template. I used onions, eggs, bean sprouts, and scallions, but you can customize to your heart’s content.

Add mushrooms, peas, or carrots. Cut your chicken into smaller pieces if you like. Omit the onions, use black pepper instead of white pepper… I think you get the point.

One word of advice: if you’ve never made chicken fried rice before, then follow these directions as written just once. Then next time, you can make adjustments according to your own tastes and experiment with variations.

Chicken Fried Rice Recipe Instructions

Combine the chicken and marinade ingredients ( soy sauce , cornstarch , sesame oil , and oil). Set aside while you prepare the rest of the ingredients.

In a small bowl, combine the hot water, sugar, light soy sauce , dark soy sauce , salt, and white pepper . This is the sauce you’ll add to the rice. It’s much easier to have it combined and ready to go before you start cooking.

Fluff your cooked rice with a fork or with your hands. (You can rinse your hands in cold water if the rice starts sticking to them.) If you are using cold leftover rice, try to break up the clumps as best as possible.

Heat the wok over medium high heat, and add 1 tablespoon of oil. Add the eggs and scramble them until just cooked. Start scooping them up when they look like they are almost set.

Set aside. They will continue to cook in the bowl and you will cook them again in the rice. I’m only harping on this because you don’t want dried egg bits in your chicken fried rice!

Heat the wok until just smoking and spread another tablespoon oil around the perimeter. Sear the marinated chicken in one layer for 20 seconds.

Cooking Rice:

When it comes to fried rice, leftover rice is best. But how exactly do you make the rice in the first place?

If you have not purchased a rice cooker yet, then you really should consider it. They’re a kitchen lifesaver, and we recommend a really simple one without too many bells and whistles. Check out our Chinese Cooking Tools page for more information and some useful links to products.

If the rice is cold from the refrigerator, continue stir-frying to warm it up, which will take about 5 minutes. Sprinkling just a little water on large clumps of rice will help break them up more easily.

If you made the rice fresh, it will cook faster. Just make sure that the rice isn’t too wet, as it will make frying it difficult.

Then gather all of the rice into the middle of the wok. This lets the sides of the wok heat up. After about 20 seconds, spread the Shaoxing wine around the perimeter of the wok, and stir-fry for another 20 seconds.

This step gives you a little of that extra “wok hei” that you taste when you get fried rice from a good Chinese restaurant.

Chicken Fried Rice

Ingredients

For the chicken and marinade:.

  • ▢ 8 ounces chicken breast (about 1 large, diced into ½-inch cubes)
  • ▢ 1 teaspoon light soy sauce
  • ▢ 1 teaspoon cornstarch
  • ▢ 1/2 teaspoon sesame oil
  • ▢ 1 teaspoon oil

You’ll also need:

  • ▢ 1 tablespoon hot water
  • ▢ ¼ teaspoon sugar
  • ▢ 1 tablespoon light soy sauce (or to taste)
  • ▢ 1 teaspoon dark soy sauce
  • ▢ 1 teaspoon salt (or to taste)
  • ▢ 1/8 teaspoon white pepper (or to taste)
  • ▢ 5 cups cooked rice
  • ▢ 3 tablespoons canola oil (divided)
  • ▢ 2 eggs (beaten)
  • ▢ 1 medium onion (diced)
  • ▢ 1 cup fresh mung bean sprouts
  • ▢ 1 scallion (chopped)
  • ▢ 1 tablespoon shaoxing wine

Instructions

  • Combine the chicken and marinade ingredients. In a separate bowl, combine the hot water, sugar, light soy sauce, dark soy sauce, salt, and white pepper in a small bowl. Set aside.
  • Take your cooked rice and fluff it with a fork or with your hands (you can rinse your hands in cold water if the rice starts sticking to them). If you are using cold leftover rice, try to break up the clumps as best as possible.
  • Heat the wok over medium high heat and add 1 tablespoon of oil. Add the eggs and scramble them until just done. Remove from the wok immediately, and set aside.
  • Heat the wok until just smoking and spread another tablespoon oil around your wok. Sear the marinated chicken in one layer for 20 seconds. Stir-fry the chicken until about 80% done. Remove the chicken and set aside.
  • With the wok over medium high heat, add the final tablespoon of oil, and sauté the onions until translucent. Add the rice, and use your metal spatula to flatten out and break up any large clumps. If the rice is cold from the refrigerator, continue stir-frying until the rice is warmed up, which will take about 5 minutes.   • Ingredients
  • 3¾ cups (750g) long grain parboiled rice
  • Vegetable Oil
  • Chicken (whole chicken or chicken drumsticks)
  • 100g cow liver
  • 1 tablespoon Nigerian curry powder (NOT Indian Curry)
  • ½ cup green beans
  • Salt (to taste)
  • 3 stock/boullion cubes
  • 1 tablespoon thyme

Before you cook the Fried Rice

Prepare the liver and chicken

  • Cook the cow liver till done and cut into tiny pieces. To save time and energy, you can cook the liver with the chicken as I did in the video below.
  • Cut the whole chicken into pieces and cook with the Knorr cubes, thyme and 2 bulbs of onions (chopped). When done, grill in an oven or deepfry with vegetable oil. This gives it a golden look which is more presentable especially when you are entertaining guests. Read how to season and grill chicken for more details.

Cooking Directions

  • Parboil the rice using the method detailed in parboiling rice for cooking fried rice . A well parboiled rice ensures that the grains of the rice will not stick together when the rice is done. Rinse the parboiled rice with cold water and put in a sieve so all the water drains out.
  • Pour the chicken stock into a sieve to remove all traces of onions, thyme etc used in cooking the chicken. Pour the stock into a pot and set to boil. Once the water boils, add the parboiled rice. Also, add 1 tablespoon of plain yellow curry powder, then add salt to taste. The plain yellow curry powder is merely for colouring so should not contain chilli.
  • The water level should be slightly less than the level of the rice; at most it should be at the same level as the rice. This is to ensure that all the water dries up by the time the rice is cooked and that the rice is not over cooked. This is the quantity of water that will cook the rice and the grains will not stick together. Stir the contents; cover the pot and leave to cook on medium heat. This way the rice does not burn before the water dries up.
  • Once the water has dried up, the rice should be cooked perfectly. Perfect fried rice is one that the grains are separated from one another, resistant to the bite but not hard.
  • Now pour a small amount of vegetable oil into a frying pan. This quantity of oil should be such that it would be absorbed by 1 part of the cooked rice and 1 part each of the vegetables. When the oil is hot, add 1 part of diced onions and stir for 10 seconds, followed by 1 part of diced cow liver, one part each of the diced vegetables, then 1 part of cooked rice.
  • Add more salt if necessary. More curry powder may also be added at this stage if you need to touch up on the colour. Stir till all the ingredients have mixed well and transfer to a dry pot. Repeat this for the remaining batches of the ingredients.

The fried rice is ready. Serve with fried chicken. You can add coleslaw , Moi Moi or Nigerian salad .

Nigerian jollof rice

Jollof rice is one of the most simple and easy to make Nigerian food, you’d want to start from here if you are new to Nigerian cooking.

Are you married to a Nigerian person and probably looking for an easy recipe to try out first?

Jollof rice is the most popular food in Africa and, the required ingredients are abundant in most countries of the world.

This is how we serve it in Nigeria. You can add fried meat, fried plantain or even vegetable salad.

In the last 5 years, I have tried my hands on over 14 different rice recipes and even made an ebook about them.

What you find above is a delicious plate of jollof rice plus fried beef.

I made this some weeks back and will be giving you a step by step recipe.

Ingredients for Jollof Rice

4 cups of rice 1kg Chicken/beef 1000ml of Ground Fresh tomatoes. 50ml Ground Fresh peppers 1 Teaspoon Curry powder 1 teaspoon Thyme 1 teaspoon Nutmeg powder 2 seasoning cubes 1 cup of sliced onions 300ml vegetable salt to taste. 2 cloves of garlic 2 fingers of ginger

Just wash, squeeze out water inside the tomatoes, blend as is, and set aside.

You need around, 1000ml  of ground tomatoes for 4 cups of rice.

Step by Step Preparation

Step 1 Season the chicken/beef with a teaspoon of salt, one seasoning cubes, half a teaspoon each of curry and thyme, half a cup of sliced onions then let it sit for some minutes.

Set on heat and let it boil for 10-15 minutes, would take more time to cook the beef.

Step 2 Set aside the meat and the stock in fresh bowls.

Peel off the outer back of the ginger/garlic, pound, or grind.

Step 3 Parboil rice the normal way, boil about 7 cups of water in a pot, add the four cups of rice and allow boiling for 3 minutes. Then pour out and wash thoroughly with clean water, then set aside in a bowl or plastic sieve.

Step 4 Pick out the parboiled tasty meat and deep-fry, set aside. Step 5 Once you are done with frying the chicken, reduce the oil to 250ml (1 cup) just add the remaining one cup of sliced onions, stir for 1-2 minutes, add the ground tomatoes. I like to cook jollof rice with the same oil I used while frying the meat.

Using a fresh oil is just the same as cooking without the beef stock (meat water) which actually holds over 70 percent of the ingredient that is used in making most Nigerian foods.

The end result is not the same.

How to Make Nigerian Jollof Rice.

Step 6 Frying the tomatoes would take about 20 minutes.

Fry until when you lift a portion with your frying spoon, you will notice the oil continues to boil in the spoon.

You also notice the tomatoes turning dark.

Step 7 Once the tomato is well fried, add the meat water (chicken/beef stock) to the fried tomato in the pot, the ground ginger/garlic, half a teaspoon each of curry and thyme, salt to taste, add 4 cups of water.

Add another seasoning cube. Stir and taste, it should taste overly spiced. Don’t worry, once the rice is added the taste would balance.

Add the rice.

Then cover and allow the rice to cook on low heat for 30-45 minutes. Remember that you can add water occasionally.

Turn and serve with the fried meat.

This is just how to make jollof rice, you can serve with the fried meat, salad and maybe a bottle of your favorite drink

Wondering why my meat is red? I dipped them in tomato sauce

Add 4 tbsp. of tomato sauce in a pot, while still on heat add the fried meat, allow it to heat for few minutes while you continue to turn. Serve chicken and jollof rice as you can see above.

Jollof Rice Recipe

Ingredients   .

  • 4 cups of rice
  • 1 kg meat
  • 1000 ml of Ground Fresh tomatoes your blender is calibrated, 1000ml = 1 liter
  • 50 ml Ground Fresh peppers
  • Spices Curry, Thyme, Delice, Nutmeg, Chicken spice
  • 3 Seasoning cubes
  • 2 cups of sliced onions
  • 300 ml Vegetable oil
  • Salt to taste.
  • 2 Cloves of garlic and
  • 2 Fingers of ginger

Instructions  

  • Start by precooking your meat with the listed spices (a teaspoon each of thyme, curry, and salt; two seasoning cubes and sliced onion) Allow the meat to cook till tender.
  • Peel of the outer back of the ginger/garlic, pound or grind.
  • Parboil 4 cups of rice, wash and set aside in a plastic bowl.
  • Once the meat is tender, seperate from the stock and deep fry.
  • Fry the ground tomatoes until it is turning day (about 20-25 minutes) stir continously to avoid burning it.
  • When the tomato is well fried, add the chicken stock (meat water).
  • Add the blended ginger/garlic, a teaspoon each of curry and thyme, two teaspoons of salt
  • Add 4 cups of water also, taste, add salt to taste.
  • Add one seasoning cube. Stir and taste, you want it overly spiced. The rice will take some of it away.
  • Allow to boil before adding the parboiled rice, stir.
  • Then just cook with the pot covered till the rice is soft.
  • Turn evenly and serve with the fried chicken.
  • NOTE: If you don't want your jollof rice to start burning before it is well cooked, you need to remove some of the fried tomatoes before adding the rice. Then add it later.

Also what peppers do you use to grind? Does using a blender give you the same texture as grinding?

Sure, you could blend or grind, as long you get a smooth paste at the end of the day, you will be ok. I used scotch bonnet peppers. I have edited the jollof rice recipe to include an image. Thanks for your feedback

You can use a combination of fresh and canned tomatoes and yes, you can fry both together when making jollof rice.

Chidi,your recipes are very nice. You r really good at what you do. However,I do normally boil my fresh tomatoes after grinding or slicing till it dries,that way I wont hv to deep fry. I really avoid too much fries dats why.

That is cool, I mean the part where you boil your tomato after grinding. There are just so many ways of doing everything, keep making tasty foods.

Cee, You don’t ever need to boil the tomatoes, just grind and fry, you can also slice and fry. Whatever you do, even if you boiled it, you will still need to fry the tomato before commencing with the rest of the cooking. It would be nice if you look up the embeded video

hi, I really don’t understand that part of seiving ur fresh tomatoes and pepper, i thought the normal thing to be done is to boil the grinded tomatoes until it becomes dry thereby also reducing the sour taste? besides, from ur illustrations, I dint see where u boiled it. Christie, yes, you can just filter and fry, it is faster and better that way. However, you can also boil instead of filtering.

Yes! I have tried this rice recipe and it turned out perfectly well but there seemed to be a little difference with the one I ate at a friends birthday party, there was a slight difference in taste and color, maybe I probably didn’t get it right. I will have to try again and keep trying till I get that particular taste

Fried rice is a classic Chinese dish, with many different variation depending on the region. Of course, it is a staple of many a quick and easy college meal. The main ingredient, rice, is cheap and easy to cook, and you can add in almost any meat or vegetable sitting around in your fridge. It's so easy to make in large batches, that I often make enough for 3-4 meals in one go - perfect for when exam season rolls around!

Step 1: Ingredients

What ingredients to use for fried rice vary widely - the version I am writing up here is the ultimate budget meal - incredibly cheap, but tasty and complete with eggs, bacon, and frozen veggies for your daily nutrition needs :)

Must-have Ingredients

  • Cooked rice
  • Green Onion
  • Salt and Pepper
  • Light Soy Sauce

Optional/Varied

  • 1 bag of frozen chopped veggies

Turn a pan onto medium-high heat and add in a couple spoons of cooking oil. When it starts to heat up, add in some of your chopped green onion - this helps enhance the flavor of the rice. Finally, add the remaining ingredients into the pan and stir fry!

Step 4: Fry the Rice

Now that all the ingredients are in one place, start to stir fry!

I recommend starting with adding 1 teaspoon of salt, a sprinkle of pepper, and a couple of table spoons of soy sauce to the ingredients in the pan, and then continuing to adjust the amounts as the rice continues cooking.

Stir fry for approximately 7-8 minutes, and enjoy by itself, or with added sauces (I have friends who add in chili sauce, or even ketchup!)

Fried rice originated in the Sui Dynasty in Yangzhou, the Eastern Jiangsu province of China, as a way to use up leftover (usually day old) rice and avoid food waste. During the Gold Rush in the 19th century, the Chinese immigrants introduced Americans to fried rice.

In Japan, fried rice is called Yakimeshi, using short-grain rice that is stir fried with ham, shrimp or pork, egg and green onions. Regionally, in Osaka, fried rice may be seasoned with Worcestershire sauce instead of soy sauce.

3 tablespoons vegetable oil, divided

2 large eggs, beaten to blend

5 ounces 41/50 medium shrimp, peeled and deveined, cut into 1/4 inch pieces or 3 ounces Japanese kurobuta or Berkshire pork sausage

Heat a large skillet or wok over medium-high heat. Pour in 1 tablespoon oil, then add the eggs and cook, stirring constantly, for 2 to 3 minutes, until just cooked through. Transfer the eggs to a plate.

In the same pan over medium-high heat, warm the remaining 2 tablespoons of oil. Once the oil is hot and glistening, cook the shrimp, carrots, green onion and garlic, stirring, for about 2 minutes, until the carrots are darker in color and softened.

Add the rice, stirring and cutting through the rice, mixing with the carrot and shrimp mixture, and coating the rice in the seasoned oil, for about one minute or until warmed through. Mix in the corn, peas and white pepper.

Push the rice off to the side of the frying pan and pour the sesame oil into the empty side. Once the oil is hot, stir in the rice mixture into the oil.

Push the rice off to the side again and pour the soy sauce into the empty side, making sure the soy sauce is sizzling before mixing and incorporating into the rice. Stir in the reserved eggs until combined, then serve immediately.

In Indonesia, Nasi Goreng is seasoned with sweet kecap manis sauce and topped with a runny fried egg.

Heat oil in a large skillet or wok over high heat. Add chili and garlic, stir for 10 seconds. Add onion, cook for 1 minute.

Add chicken, cook until it turns white, then add 1 tablespoon kecap manis and cook for 1 minute or until the chicken is cooked through and a bit caramelized.

Add the rice, 2 more tablespoon kecap manis and shrimp paste. Cook, stirring constantly, for 2 minutes until the sauce reduces down and the rice grains start to caramelize (key to flavor).

Serve, garnished with green onions, red chili, fried shallots.

Khao Pad Goong. or fried rice with shrimp, is popular in Thailand. It is often served with a wedge of lime and prik nam pla, or chile/fish sauce, on the side.

3 cups cooked jasmine rice, refrigerated for at least 2 hours

1 tablespoon fish sauce

Heat a wok over medium-high heat. Add vegetable oil. Saute garlic and shallots until aromatic, and shallots are translucent. Add cooked rice, stir to mix garlic and shallots into the rice. Add fish sauce and thin soy sauce, continue to mix.

Move the rice to the side of the pan. Add a little more oil, add eggs and scramble them. Once cooked, mix into rice.

Add the green onions and cilantro. Mix to combine, then turn off heat.

Serve with lime wedges, ground white pepper, and cucumbers.

You will notice that the recipes all call for cold refrigerated rice. Freshly steamed rice will make mushy and soft fried rice, not the ideal texture. Chef Ming Tsai suggests if you do not have day-old rice, cook the rice, then spread it on a baking sheet and freeze it for half an hour. The texture will not be the same as day-old refrigerated rice but will work in a pinch.
